Verjus is perfect for vinaigrettes... in place of any vinegar you're using or even to mellow out the acid in a favorite vinaigrette. I love vinegars... especially champagne vinegars for salads. Verjus works perfectly stand alone or used as half of the amount of vinegar you normally would us. It's really up to your taste...
Try this as a vinaigrette for a simple salad.
Everyday Verjus Vinaigrette

1/3 cup Verjus
1/4 cup Champagne vinegar
1/4 cup mild extra virigin Olive Oil
2 medium cloves garlic
salt and pepper to taste
Salads --- try a Mesculin mix of Arugula, Spinich & Dandalion Greens or Butterleaf Lettuce along with radishes, thinly sliced cucumber and cherry tomatoes.
