Verjus is a gentle acidulant (that's acid) for cooking - to use in place of Lemon Juice, Balsamic or Red Wine Vinegar or Rice Wine Vinegar.

This centuries old ingredient can be used in place of vinegars in your favorite vinaigrette recipe, splashed over fresh cut seasonal fruit, used in place of water for steaming vegetables or light white fish, and deglazing pans. Splashed in risottos and rice, as a bath for fish from salmon to any white fish. Marinades for red or white meats including chicken and pork.

Verjus production became a natural choice in 2004 when we realized the need to produce this amazing culinary product! Today we produce a few thousand cases. Starting with the green thinning of semi-ripe wine grapes, these 'green' grapes come from the viticulture practice of thinning from our vineyards. This first harvest in the vineyard is now called our Verjus harvest!

As it was once said....

Our Saba is made from must of estate grown winegrapes reduced down to a thick sweet cooking syrup.

This traditional specialty gourmet product is used in many ways, limited only by your culinary imagination: As a drink when diluted with water (sparkling water is delicious!), over shaved ice (granita), over ice cream, to sweeten breads and cookies, as a condiment on beans or polenta, or added to ricotta or yogurt. Add it to your tomato sauce instead of sugar to create an exceptional sauce. Try Saba in salad dressings and marinades for extra sweetness and flavor. When fresh fruits are in season, serve sliced with a little Saba drizzled on top. Drizzled over seared scallops, over grilled chicken or roasts = delicious.

Our first olive oil release. A blend of Pendolino, Manzanillo and Mission Olives from our home ranch. This blend is a rich, fruity, slightly peppery, and luscious. Delicious with in vinaigrettes (blended with Verjus) with salads, pasta sauces, dollop in soups, drizzled over vegetables, and grilled vegetables and meats - or simply as a dipping oil.

The olives are hand-picked by our family crew, then pressed that afternoon under a traditional stone wheel   which emphasizes the richness inherent in our fruit.

The oil is unfiltered and settled. We bottle only in small batches throughout the year.
