WINTER VEGETABLES AL VERJUS

We love desserts... and always a delicious way to end the meal. A favorite for dinner parties is a flambe... not only is it a great show but oh so very delicious with bananas or even very ripe pear and peaches.

Flambe Bananas (Pear or peaches too) with Vanilla Ice Cream

1/2 stick butter
1/2 cup brown verjus
2 bananas sliced in lengthsand tossed with the juice of verjus
1/2 cup dark rum (recommended: Meyers)
Vanilla ice cream
Saba

Melt the butter gently in a large saute pan. Add the verjus and stir to combine. Cook until the mixture is thick and bubbly. Toss in the bananas.

Turn the heat up to high, pull the pan off the burner and add the rum and tip into the flame to allow the flame to jump into the pan and set on fire!

Spoon over ice cream and to top it off drizzle saba over the top and serve.
