Verjus is delicious with oysters...but you do have to love oysters. The subtle flavors of the oysters are brought out by the gentle verjus acidity. Once again the simple beauty of allowing the flavors to be what they are.
Verjus Mignonette & Oysters on the Half Shell
1/2 cup Verjus
1 Tablespoon finely minced Scallions
Let sit for an hour.
Serve oysters on the Half Shell. Drizzle the Mignonette over each oysters.
